·       1 tsp ground coriander

·       1/2 tsp cumin

·       1/2 tsp turmeric

·       1/2 tsp salt

·       1 can coconut milk

·       2 ripe harumanis, peeled and diced

·       2 tbsp fresh cilantro, chopped


Instructions:

1.     Heat the vegetable oil in a large skillet over medium heat. Add the diced onion and minced garlic and sauté until the onions are translucent, about 3-4 minutes.

2.     Add the chicken to the skillet and cook until the chicken is browned on all sides, about 5-7 minutes.

3.     Add the curry powder, ground ginger, ground coriander, cumin, turmeric, and salt to the skillet and stir until the chicken is coated with the spices.

4.     Add the can of coconut milk to the skillet and stir to combine. Bring the mixture to a simmer and let it cook for about 10 minutes, or until the chicken is fully cooked.

5.     Add the diced mangoes to the skillet and stir to combine. Let the mixture cook for another 2-3 minutes, or until the harumanis are heated through.

6.     Serve the mango chicken curry over a bed of rice, garnished with fresh cilantro.
